Course Description
This course equips students with the knowledge and skills to evaluate nutrition through both a scientific and clinical lens, grounded in a Christian worldview that values truth, stewardship, and respect for life. This course explores the quantitative and qualitative roles of nutrients at the molecular level while examining how nutritional research informs evidence-based practice. Students will engage with current scientific literature, learning how nutrition research is conducted, interpreted, and responsibly applied in clinical and wellness settings.
Throughout the course, students will develop critical thinking and analytical skills essential for professional practice, gaining confidence in translating research findings into practical nutritional recommendations. Emphasis is placed on ethical research interpretation, clear communication, and integrating scientific insight with holistic health principles.
Students will learn:
